Posted March 13, 2018 10:18:00 Rice noodles are great as a noodle dish for rice, and they are so easy to make.
The key is to get a lot of rice noodles in one bowl, so you don’t end up with a mess.
And the key is using plenty of salt and sugar, so that your noodles will be as tender as possible.
The only other ingredients you’ll need are some extra noodles, and some salt and pepper.
You’ll need: 2 cups cooked rice noodles, soaked 1 1/2 cups water, 1 tablespoon salt, and 1 tablespoon sugar, and 3 tablespoons vegetable oil 1.
Rinse and drain rice noodles.

In a bowl, combine water, salt, sugar, oil and rice noodles (the water and oil will be a little salty).
Add to a saucepan over medium heat and bring to a boil.
Add more water as needed to avoid burning.

Reduce heat to medium low and simmer, stirring occasionally, until rice noodles are soft, about 20 minutes.
Drain and cool.

Heat oil in a large skillet over medium-high heat.
Add the cooked rice and sauté for 1 minute.
Stir in the salt and cook for another minute.
Add water and cook until the sauce thickens, about 1 minute, then add the noodles.
Serve with rice and salad.
